This is our European/UK style dry-cured and naturally smoked back bacon. It is the classic cut in a typical English/Irish/Scottish breakfast. Normally around 10-20% fat with the option to trim the outside layer to make it even leaner, we wouldn't, but you do you. Either way it's delicious!
