Proper Bacon

We make natural, dry-cured, hot-smoked bacon from happy, local BC pigs. In Europe we call this style smoked 'Back Bacon' – it has a lot less fat than belly bacon (the stuff you mostly get here in North America, we make that too, but better). However, fat is flavour so we don't take it all away. Rather than try to explain it we suggest you just taste it.
