This is our North American dry-cured and naturally smoked belly bacon. It is the classic cut in North America. Ours is normally around 30-40% fat, we do our best to pick the leanest cuts we can get, some of the store bought stuff can be up to 60% fat (no bueno in our opinion). That said, it's delicious and great to use in recipes like carbonara and Bolognese.
